Growing up in a family involved in food production, my passion for problem-solving fueled my interests, education and life’s work in food science and technology.
Seeking new challenges, I pioneered the field of “Food Waste Recovery” with the ultimate goal of inspiring other like-minded professionals and contributing to a more sustainable future.
My work style is primarily creative and collaborative, with a strong focus on open innovation. I enjoy researching, teaching, and lecturing, while providing leading-edge advising and consulting services to industry, agencies and organizations worldwide.

Doctor in Industrial Engineering from UNMSM, Master in Strategic Business Administration from Centrum PUCP, and Engineer in Food Industries from La Molina National Agrarian University.
He has completed a specialization in Total Quality Management at the La Molina National Agrarian University and in Costs and Budgets at Centrum PUCP.
He has 17 years of experience in the Food Industry sector, where he has worked as Production Manager, Project Director, Industrial Costs, Research and Development of new products and processes to improve quality in the agribusiness sectors.
Currently, he is the director of the Agroindustrial Engineering degree course and the Food Industry Engineering degree course at USIL, he is a professor of food technology and innovation courses, he is a RENACYT Maria rostworowski level II researcher certified by CONCYTEC, he has published in Scopus, he is a member of IFT (Institute of Food Technologists), he is also a member of different technical quality committees of INACAL, he is an evaluator of ICACIT engineering programs.

Doctor in Industrial Chemistry. Professor at the Faculty of Chemical Engineering and head of the Electroanalytical and Bioenergy laboratory at the Technical University of Machala (Ecuador).

GIOVANI LEONE ZABOT

Doctor in Food Engineering from the State University of Campinas (Brazil). Professor at the Federal University of Santa Maria (Brazil) and permanent member of the Postgraduate Program in Agricultural Engineering.

PH.D. ESTEBAN HERRERA NUÑEZ

Doctor in Food Science from the Università degli Studi di Teramo in Italy, he has more than 10 years of experience in research, including projects to implement a pathogen monitoring system using GIS, the application of geostatistical models for monitoring environmental contaminants in food, the application of GIS to improve epidemiological management in livestock facilities and other technological innovation projects in agribusiness.

Researcher Renacyt Carlos Monge Medrano IV, reviewer of scientific articles indexed in international databases such as SCOPUS and Web of Science and teacher of the Physicochemical Unitary Operations courses of the Eng. agribusiness at USIL.

YASSER HIDALGO

Food engineer, with extensive experience in the wine and brewing sectors. Professional in Food Industries from the National Agrarian University La Molina, with a diploma in Operations Management from the Pontifical Catholic University of Peru. With more than 7 years as an Advisor in bioprocesses, advising producers and/or micro-enterprises in the wine and brewing sector, on installation projects, process improvement and quality. Oenology specialist in extension projects and wine consultant. As a researcher he has contributed to the technical-scientific knowledge of the wine sector with the publication of scientific articles on issues of our flagship drink Pisco, in the Journal of the Chemical Society of Peru; He has participated as an oral speaker at the XVI Latin American Congress of Viticulture and Oenology (2019) and as a speaker at the First Latin American Conference on Wines and Heritage Varieties, representing Peru (2020).
